Healthy Rain Cake

Ingredients:

  • 1 cup and 1/2 of rolled oats (4.2 oz)
  • 1/2 cup of all-purpose flour (2 oz)
  • 1 cup of sugar (demerara or brown) (7 oz)
  • 1 cup of milk (8.4 oz)
  • 1 whole egg
  • Cinnamon and sugar to taste
  • Oil for frying (I recommend coconut oil or lard)

Instructions:

  1. In a mixing bowl, combine all ingredients until you achieve a homogeneous batter.
  2. Heat a frying pan with oil for frying, enough to cover at least half of the cakes. When it’s hot enough, use a spoon to scoop small amounts of batter into the oil, forming balls.
  3. Fry until the cakes are golden brown all over. You don’t need to flip them; they will turn on their own in the hot fat as soon as one side is fully fried.
  4. Drain the cakes on paper towels and finish by rolling them in a mixture of sugar and cinnamon.
