Ingredients:
- 1 cup and 1/2 of rolled oats (4.2 oz)
- 1/2 cup of all-purpose flour (2 oz)
- 1 cup of sugar (demerara or brown) (7 oz)
- 1 cup of milk (8.4 oz)
- 1 whole egg
- Cinnamon and sugar to taste
- Oil for frying (I recommend coconut oil or lard)
Instructions:
- In a mixing bowl, combine all ingredients until you achieve a homogeneous batter.
- Heat a frying pan with oil for frying, enough to cover at least half of the cakes. When it’s hot enough, use a spoon to scoop small amounts of batter into the oil, forming balls.
- Fry until the cakes are golden brown all over. You don’t need to flip them; they will turn on their own in the hot fat as soon as one side is fully fried.
- Drain the cakes on paper towels and finish by rolling them in a mixture of sugar and cinnamon.
