Ingredients:
For the cake:
- 1 egg
- 100g (3.5 oz) sugar
- 8g (0.3 oz) vanilla sugar
- 100ml (3.4 fl oz) oil
- Grated zest of an orange
- 150ml (5.1 fl oz) orange juice
- 230g (8.1 oz) all-purpose flour
- 15g (0.5 oz) baking powder
For the topping:
- Shredded coconut
For the orange cream:
- 1 egg
- 70g (2.5 oz) sugar
- 150ml (5.1 fl oz) orange juice
- 1 1/2 tablespoons cornstarch
Instructions:
- Add oil, grated orange zest, and orange juice to a bowl, mix well.
- In another bowl, beat the egg with sugar and vanilla sugar until creamy.
- Gradually incorporate the flour into the egg mixture, stirring until smooth.
- Add the orange juice mixture into the bowl.
- Gently fold in the baking powder.
- Preheat the oven to 180°C (356°F).
- Pour the batter into greased mini cake molds and bake for 20-25 minutes, or until golden and baked through.
- Allow to cool before removing from the molds.
- Meanwhile, prepare the orange cream: In a saucepan over low heat, mix the egg with sugar, orange juice, and cornstarch, stirring continuously until thickened and creamy. Remove from heat and let it cool.
- Place the orange cream in the middle of the mini cakes and sprinkle with shredded coconut.
- Decorate with orange slices.
