Ingredients:
For the cream:
- 1 and 1/4 cups (10 oz) of milk
- 1 egg yolk
- 2 teaspoons (0.35 oz) of vanilla sugar
- 3 tablespoons (1.25 oz) of sugar
- 2 tablespoons (0.55 oz) of cornstarch
For the dough:
- 2 eggs
- 1/2 cup (3.5 oz) of sugar
- 1/2 cup (3.4 oz) of sunflower oil
- 2 and 1/4 cups (10.6 oz) of all-purpose flour
- 2 teaspoons (0.35 oz) of baking powder
- Lemon zest to taste
- Peaches (desired amount)
- Powdered sugar to taste
Instructions:
For the cream:
- In a saucepan over medium heat, mix the milk, egg yolk, vanilla sugar, 3 tablespoons of sugar, and cornstarch until thickened. Place in a piping bag and set aside.
For the dough:
- In a bowl, mix the eggs, sugar, sunflower oil, and lemon zest.
- Add the all-purpose flour and baking powder to the mixture and stir until you get a homogeneous dough.
- Let the dough rest for 20 minutes.
Assembly:
- Meanwhile, preheat the oven to 392°F (200°C) and prepare a greased baking sheet.
- Roll out the dough with a rolling pin and cut with a cookie cutter, or cut in any style you prefer.
- Place the peaches, cut into small cubes, on top of the dough.
- Use the reserved cream to top the peaches on the dough.
- If there’s any leftover dough, grate it over the dough pieces on the baking sheet.
- Bake in the preheated oven for approximately 20 minutes, or until golden and firm to the touch.
- Remove from the oven and let cool.
- Dust with powdered sugar before serving.
