Ingredients:

For the cream:

  • 1 and 1/4 cups (10 oz) of milk
  • 1 egg yolk
  • 2 teaspoons (0.35 oz) of vanilla sugar
  • 3 tablespoons (1.25 oz) of sugar
  • 2 tablespoons (0.55 oz) of cornstarch

For the dough:

  • 2 eggs
  • 1/2 cup (3.5 oz) of sugar
  • 1/2 cup (3.4 oz) of sunflower oil
  • 2 and 1/4 cups (10.6 oz) of all-purpose flour
  • 2 teaspoons (0.35 oz) of baking powder
  • Lemon zest to taste
  • Peaches (desired amount)
  • Powdered sugar to taste

Instructions:

For the cream:

  1. In a saucepan over medium heat, mix the milk, egg yolk, vanilla sugar, 3 tablespoons of sugar, and cornstarch until thickened. Place in a piping bag and set aside.

For the dough:

  1. In a bowl, mix the eggs, sugar, sunflower oil, and lemon zest.
  2. Add the all-purpose flour and baking powder to the mixture and stir until you get a homogeneous dough.
  3. Let the dough rest for 20 minutes.

Assembly:

  1. Meanwhile, preheat the oven to 392°F (200°C) and prepare a greased baking sheet.
  2. Roll out the dough with a rolling pin and cut with a cookie cutter, or cut in any style you prefer.
  3. Place the peaches, cut into small cubes, on top of the dough.
  4. Use the reserved cream to top the peaches on the dough.
  5. If there’s any leftover dough, grate it over the dough pieces on the baking sheet.
  6. Bake in the preheated oven for approximately 20 minutes, or until golden and firm to the touch.
  7. Remove from the oven and let cool.
  8. Dust with powdered sugar before serving.
