 - 80g (2.8 oz) all-purpose flour (about 2/3 cup)
 - 25g (0.9 oz) cocoa powder (about 1/4 cup)
 - 5 egg yolks
 - a pinch of salt (1/4 teaspoon)
 - 130ml (4.4 fl oz) milk (1/2 cup plus 2 tablespoons)
 - 5 egg whites
 - 110g (3.9 oz) sugar (1/2 cup plus 1 tablespoon)

- Preparing the Batter
- Separate egg whites from yolks.
 - Beat egg whites until stiff peaks form. Gradually add sugar (divided into three parts) to the whites, beating until firm. Cover with plastic wrap and refrigerate.
 - In a bowl, mix egg yolks, oil, sifted flour, and cocoa powder. Stir well until smooth.
 - Divide the milk into two parts and add to the batter, stirring to avoid lumps.
