  • 65g (2.3 oz) cooking oil
  • 80g (2.8 oz) all-purpose flour (about 2/3 cup)
  • 25g (0.9 oz) cocoa powder (about 1/4 cup)
  • 5 egg yolks
  • a pinch of salt (1/4 teaspoon)
  • 130ml (4.4 fl oz) milk (1/2 cup plus 2 tablespoons)
  • 5 egg whites
  • 110g (3.9 oz) sugar (1/2 cup plus 1 tablespoon)


  1. Preparing the Batter
    • Separate egg whites from yolks.
    • Beat egg whites until stiff peaks form. Gradually add sugar (divided into three parts) to the whites, beating until firm. Cover with plastic wrap and refrigerate.
    • In a bowl, mix egg yolks, oil, sifted flour, and cocoa powder. Stir well until smooth.
    • Divide the milk into two parts and add to the batter, stirring to avoid lumps.
  2. Combining the Ingredients
    • Add a ladle of the beaten egg whites to the cocoa batter and fold gently from bottom to top.
    • Next, add the remaining egg whites to the batter and fold again, incorporating air into the batter.
  3. Baking
    • Pour the batter into a square 16.5cm x 16.5cm (6.5 in x 6.5 in) baking pan lined with parchment paper.
    • Place the pan in a larger pan filled with hot water in the bottom compartment of a preheated oven at 150°C (300°F).
    • Bake for about 60 minutes or until done.
