Ingredients:
For the custard:
- 2 eggs
- 1 cup (5.3 oz / 150g) sugar
- Vanilla extract to taste
- ½ cup (2.1 oz / 60g) cornstarch
- 2 cups (16 fl oz / 500ml) milk
- 10 tablespoons (5.6 oz / 160g) butter, softened
For the pastry dough:
- 5½ tablespoons (2.8 oz / 80g) butter
- A pinch of salt
- A pinch of sugar
- ⅓ cup (2.7 fl oz / 100ml) milk
- ⅓ cup (2.7 fl oz / 100ml) water
- 1 cup (4.2 oz / 120g) all-purpose flour
- 3-4 eggs
- Parchment paper (12″ x 16″ / 30*40 cm)
- Flaked almonds
- Powdered sugar
Instructions:
- In a saucepan over medium-high heat, mix eggs, sugar, vanilla extract, cornstarch, and milk. Cook, stirring constantly until the mixture thickens. Allow to cool to room temperature, stirring occasionally.
- In another saucepan, melt butter with a pinch of salt, a pinch of sugar, milk, and water. Cook until the butter is completely dissolved.
- Add flour to the butter mixture and cook until a homogeneous dough forms.
- In a bowl, beat the eggs and add them to the dough, stirring well.
- Spread the dough thinly and evenly onto two parchment-lined baking sheets.
- Bake in a preheated oven at 400°F (200°C) for 10-15 minutes. Let cool after baking.
- Cut the pastry into 8 rectangular pieces.
- In a mixer, beat softened butter for 5 minutes.
- Mix the custard with the beaten butter and spread over the pastry pieces to form layers.
- Sprinkle flaked almonds around the sides as desired.
- Let cool for a few hours.
