Ingredients:

  • 3 whole eggs
  • 1 cup (8 fl oz) milk
  • 1 cup (8 fl oz) vegetable oil
  • 1 cup (7 oz) granulated sugar
  • 1 cup (4.4 oz) all-purpose flour
  • 1 cup (4.6 oz) cornmeal
  • 1 tablespoon baking powder

Instructions:

  1. In a blender, beat the eggs, milk, oil, and sugar until smooth.
  2. Pour the mixture into a large bowl.
  3. Gradually add the sifted flour and cornmeal, alternating between them and mixing well.
  4. Finally, add the baking powder and mix gently.
  5. Pour the batter into a buttered and floured pan.
  6. Preheat the oven to 350°F (180°C).
  7. Bake for approximately 30 minutes or until the cake is golden.
  8. Remove from the oven and, while still hot, poke holes in the cake with a fork and pour sweetened condensed milk over it to moisten.
  9. Optional: Mix granulated sugar with cinnamon and sprinkle over the cake.
  10. Return to the oven for another 5 minutes to form a crust.
