  • 3 eggs
  • 150g sugar (5.3 oz or about ¾ cup)
  • 150g melted butter (5.3 oz or about ⅔ cup)
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract (optional)
  • 180g all-purpose flour (6.3 oz or about 1 cup + 2 tablespoons)
  • 1 teaspoon baking powder
  • 60ml milk (2 fl oz or about ¼ cup)
  • 100g dried fruits (3.5 oz or about ½ cup)


  1. Preheat the oven to 165°C (329°F). Grease a 21x11x6 cm (8×4.5×2.5 inch) loaf pan.
  2. In a large bowl, beat the eggs with the sugar until the mixture is pale and fluffy.
  3. Add the melted butter, vanilla extract, and almond extract (if using), and beat again until well combined.
  4. Gently fold in the sifted all-purpose flour and baking powder into the mixture.
  5. Add the milk and mix for an additional 10 seconds, just until incorporated.
  6. Pour the batter into the prepared loaf pan and spread it evenly.
  7. Finally, mix the dried fruits into the batter, optionally layering them throughout the batter.
  8. Bake in the preheated oven for 40 to 45 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for a few minutes.
  10. If desired, dust with powdered sugar before serving.
