Carrot Chocolate Cake! Flourless, Sugar-free, and Oil-free!

Ingredients:

  • 2 medium carrots (about 7 oz or 200g), grated
  • 3 eggs
  • 1 cup (3.5 oz or 100g) sweetener (or sugar, if preferred)
  • 1 cup (2.8 oz or 80g) oat flour
  • 0.7 oz or 20g unsweetened cocoa powder
  • 1 teaspoon baking powder

Instructions:

  1. Preheat the oven to 350°F (180°C) and prepare a 6-7 inch silicone cake pan.
  2. In a bowl, beat the eggs with the sweetener until smooth and homogeneous.
  3. Add oat flour, cocoa powder, and baking powder to the egg mixture. Stir well until all ingredients are combined.
  4. Pour the batter into the prepared pan.
  5. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center of the cake comes out clean.
  6. If using a microwave, cook on medium power (600 W) for 9 to 10 minutes.
  7. While the cake is baking, prepare the frosting (if desired).
  8. Combine 1 oz (30ml) milk and 1 oz (30g) chocolate in a microwave-safe bowl and heat in the microwave until the chocolate melts.
  9. Pour the warm frosting over the freshly baked cake and garnish with crushed peanuts or nuts of choice.
  10. Allow to cool slightly before serving. This cake can be enjoyed warm or cold.
