Ingredients:

For the batter:

  • 150g of grated carrots (5.3 oz)
  • 1 egg
  • 100g of plain yogurt (3.5 oz)
  • A pinch of ground cinnamon
  • 25g of rolled oats (0.9 oz)
  • 25g of oat flour (0.9 oz)
  • 25g of cornmeal (0.9 oz)
  • 1/3 teaspoon of baking powder
  • 1/3 teaspoon of baking soda

For the filling:

  • 200g of cream cheese (approximately 7 oz)
  • 100g of mascarpone or cream cheese (approximately 3.5 oz)
  • Sweetener to taste
  • A pinch of vanilla extract
  • 50g of chopped walnuts (approximately 1.75 oz)

Preparation Method:

  1. In a bowl, mix the grated carrots, egg, plain yogurt, and ground cinnamon.
  2. Add the rolled oats, oat flour, cornmeal, baking powder, and baking soda. Mix well until it forms a homogeneous batter.
  3. Lightly grease a skillet with olive oil and pour the batter into the skillet, dividing it into 3 round parts.
  4. Cook on low heat for a few minutes on each side until both sides are cooked.
  5. While it cools, prepare the filling: mix the cream cheese, mascarpone or cream cheese, sweetener, and vanilla extract until creamy.
