Ingredients:
For the batter:
- 150g of grated carrots (5.3 oz)
- 1 egg
- 100g of plain yogurt (3.5 oz)
- A pinch of ground cinnamon
- 25g of rolled oats (0.9 oz)
- 25g of oat flour (0.9 oz)
- 25g of cornmeal (0.9 oz)
- 1/3 teaspoon of baking powder
- 1/3 teaspoon of baking soda
For the filling:
- 200g of cream cheese (approximately 7 oz)
- 100g of mascarpone or cream cheese (approximately 3.5 oz)
- Sweetener to taste
- A pinch of vanilla extract
- 50g of chopped walnuts (approximately 1.75 oz)
Preparation Method:
- In a bowl, mix the grated carrots, egg, plain yogurt, and ground cinnamon.
- Add the rolled oats, oat flour, cornmeal, baking powder, and baking soda. Mix well until it forms a homogeneous batter.
