Crunchy Granulated Tapioca Bread

  • 2 cups of granulated tapioca (approx. 340g or 12 oz)
  • 200 ml of cow’s milk (approx. 6.8 fl oz or 3/4 cup)
  • 2 tablespoons of butter (approx. 28g or 1 oz)
  • 1 teaspoon of salt
  • 1 egg
  • 1/2 cup of sweet starch (approx. 60g or 2 oz)
  • 1 cup of shredded mozzarella cheese (approx. 113g or 4 oz)


  1. In a saucepan, heat the milk until it’s almost boiling.
  2. In a bowl, combine the hot milk with butter and salt to taste.
  3. Add the granulated tapioca. Let it rest for 5 to 10 minutes until the tapioca is hydrated and swollen.
  4. Mix in the beaten egg quickly to incorporate.
  5. Add the sweet starch and shredded mozzarella cheese. Mix until a homogeneous dough is formed.
  6. Knead the dough well with your hands until it’s uniform.
  7. Shape the dough into small balls or rolls.
  8. Place the rolls on a greased baking sheet or lined with parchment paper.
  9. Preheat the oven to 356-392°F (180-200°C).
  10. Bake the rolls for approximately 30 minutes or until golden brown.
  11. Remove from the oven and let cool slightly before serving.

Tips: You can freeze the rolls for longer storage. Just place them on a tray in the freezer and, once frozen, transfer them to a freezer bag or container. To bake, put them directly in the oven frozen.
