Delicious Tapioca Starch Cookie! Very Soft, Easy, and Practical

  • 1 egg
  • 85 g (approximately 3 oz) of sugar
  • A pinch of salt
  • 100 g (3.5 oz) of heavy cream
  • 1 heaping tablespoon of margarine
  • A few drops of vanilla extract
  • 600 g (21 oz or 4 cups) of tapioca starch
  • 1 tablespoon of baking powder
  • 50 g (1.75 oz) of grated coconut


  1. In a bowl, mix the egg, sugar, salt, heavy cream, and margarine until a smooth cream forms.
  2. Add the vanilla extract and mix well.
  3. Gradually incorporate the tapioca starch until the dough starts to come away from your hands. If necessary, add more starch gradually.
  4. Add the baking powder and grated coconut, kneading well until the dough is smooth and homogeneous.
  5. Shape the cookies into small balls and flatten them slightly with the palm of your hand.
  6. Use the tip of a fork to make a small indentation in the center of each cookie.
  7. Use a skewer to make decorative details on the surface, as if drawing a flower.
  8. Place the cookies on a baking sheet and bake in a preheated oven at 180°C (350°F) for approximately 15 minutes or until they are golden brown on the bottom.
  9. Remove from the oven and let cool before serving.
