  • 1 cup of water (200 ml / 6.76 fl oz)
  • 9.17 oz (260 g) of butter
  • 1 cup of all-purpose flour (4.94 oz / 140 g)
  • 6 eggs
  • 4.23 oz (120 g) of sugar
  • 2.12 oz (60 g) of cornstarch
  • 2.11 cups (500 ml / 16.91 fl oz) of milk
  • 0.18 oz (5 g) of vanilla sugar


  1. Prepare the dough: In a saucepan, heat the water with a pinch of salt and 3.53 oz (100 g) of butter until it boils. Then, add the flour all at once and mix well until a homogeneous dough forms.
  2. Let the dough cool slightly.
  3. For the cream: In a container, add 2 eggs and the sugar; mix well.
  4. Add the cornstarch and milk and mix.
  5. Cook over medium heat, stirring constantly, until it boils and thickens. Then, remove from the heat, reserve, and let cool.
  6. To the dough, add 4 eggs, one at a time, mixing well after each egg.
  7. Place half of the dough in a greased 7-inch (18 cm) pan and bake in a preheated oven at 392°F (200°C) for 20-25 minutes, until golden.
  8. Repeat the baking process with the other half of the dough.
  9. While the second cake bakes, add 5.64 oz (160 g) of butter to the cream and beat with a mixer.
  10. Add the vanilla sugar and mix.
  11. Assembly: Spread the cream over the first baked cake and cover with the second cake.
  12. Leave the cake in the refrigerator for at least 4 hours.
  13. Sprinkle a little sugar to finish.
