Flat Turkish Bread: Incredibly Soft Texture and Amazing Flavor

  • 5.4 fl oz (160 ml) warm milk
  • 5.4 fl oz (160 ml) hot water
  • 0.35 oz (10g) instant dry yeast
  • 0.35 oz (10g) sugar
  • 17.6 oz (500g) all-purpose flour
  • 0.28 oz (8g) salt
  • 0.63 oz (18g) (3 tablespoons) olive oil


  1. In a bowl, combine warm milk, hot water, instant yeast, and sugar. Let it rest for a few minutes until the yeast activates.
  2. In another bowl, mix the flour and salt.
  3. Add the yeast mixture to the flour and mix well to form a dough.
  4. Incorporate the olive oil and knead the dough until smooth and the oil is fully incorporated.
  5. Cover the dough with a drizzle of olive oil on top to prevent sticking and let it ferment in a warm place (between 96.8°F and 104°F / 36°C and 40°C) until doubled in size, about 1 hour.
  6. After rising, divide the dough into 6 equal parts and form balls with each. Cover with plastic wrap to prevent drying out.
  7. Preheat a skillet or griddle until very hot.
  8. On a floured surface, roll out each dough ball into a disk about 7 inches (18 cm) in diameter and 0.2 inches (5 mm) thick.
  9. Cook each disk over medium heat on the hot skillet, flipping when bubbles start to form on the surface.
  10. Continue flipping until both sides are lightly golden and the bread has puffed up.
  11. Remove from the skillet and brush with melted butter (or olive oil). Optionally, sprinkle with crushed red pepper and chopped parsley.
