  • All-purpose flour: 10.6 oz (300 g)
  • Salt: 1 teaspoon
  • Sugar: 1 teaspoon
  • Water: 23 fl oz (650 ml)
  • Olive oil


  1. Sift the flour.
  2. Add salt and sugar to the flour.
  3. Bring the water to a boil.
  4. Add the flour mixture to the boiling water and stir well, cooking over medium heat.
  5. Keep stirring until you have a dough-like consistency similar to mashed potatoes.
  6. Remove from heat and let it cool slightly. Then gradually sprinkle a little flour on top and knead for 8 minutes.
  7. Let it rest for 10 minutes.
  8. Divide the dough in half and form balls with each portion.
  9. Take one of these balls, sprinkle a little more flour, and use a rolling pin to flatten it like you would for pizza dough. Repeat the process with all the balls.
  10. Fry the dough in olive oil on both sides over medium heat.
  11. It’s ready to serve.
