Ingredients:

  • 1 egg yolk
  • 3 tablespoons of sugar (about 1.6 oz or 45g)
  • 1/2 teaspoon of salt
  • 2 tablespoons of cornstarch (about 1 oz or 30g)
  • 4 to 5 drops of vanilla extract (optional)
  • 1 1/4 cups of milk (about 10.1 fl oz or 300ml)
  • 1 slice of cheddar cheese (optional)
  • A piece of butter (for greasing)

Instructions:

  1. In a saucepan, place the egg yolk. Add the sugar and salt and mix until the sugar and salt are incorporated and the mixture turns yellowish.
  2. Add the cornstarch and mix well. Include the vanilla extract if you’re using it.
  3. Add the milk to the mixture and stir until all the ingredients are well dissolved. Make sure there are no lumps of starch.
  4. Over low heat, warm the mixture, stirring continuously. After about a minute, when the milk is warm, add the slice of cheddar cheese. Keep stirring until the cheese melts completely.
  5. Continue cooking on low heat, stirring to increase viscosity. When the mixture begins to thicken and bubbles appear, turn off the heat.
  6. Let the mixture cool slightly and transfer to a heat-resistant container, leveling it to a uniform surface. Tap the container lightly on the counter to remove air bubbles.
  7. Refrigerate for at least 2 hours to set.
  8. After the cooling time, cut the pudding into small pieces.
  9. In a skillet, melt a piece of butter over medium heat. Place the pieces of pudding in the skillet, letting them brown for approximately 3 minutes on each side.
