Gluten-Free Crispy Rice Cookies

  • 1/4 cup (1.76 oz or 50g) cooked rice
  • 1/4 cup (1.76 oz or 50g) water
  • 1 egg white
  • 1 teaspoon (0.18 oz or 5g) sugar
  • 1/2 teaspoon (0.07 oz or 2g) lemon juice


  1. In a blender, blend the cooked rice with a little water until very fine.
  2. Using a mixer, beat the egg white until stiff.
  3. Add sugar and lemon juice to the egg white and continue beating until well incorporated.
  4. Gently fold the ground rice into the egg white mixture using a spatula, being careful not to deflate the mixture, stirring from bottom to top.
  5. Transfer the batter into a piping bag fitted with a flat serrated tip (36mm diameter base) and pipe onto a large baking sheet into small pieces.
  6. Preheat the oven to 120°C (248°F).
  7. Bake the rice cookies for 60 minutes.
