  • 3 eggs
  • 1 can of corn kernels (use the corn can to measure the other ingredients)
  • Half a can of oil
  • 1 can of sugar
  • 1 can of milk
  • 1 and a half cans of cornmeal (fine corn flour)
  • 1 tablespoon of baking powder


  1. In a blender, add the eggs and drained corn kernels. Blend for about 5 minutes until the corn is well crushed.
  2. Add the oil (half a can) and continue blending.
  3. Add the sugar (1 can) and milk (1 can), blending again.
  4. Next, add the cornmeal (1 and a half cans) and blend for another 2 minutes.
  5. Finally, add the baking powder and blend briefly just to mix.
  6. Pour the batter into a buttered and cornmeal-dusted 20cm x 10cm baking pan.
  7. Bake in a preheated oven at 180 degrees Celsius (350 degrees Fahrenheit) for approximately 40 minutes.
  8. After baking, remove the cake from the pan and serve with a fresh cup of coffee.
