Ingredients:
- 6 medium potatoes (approximately 32 oz or 900g)
- 2-3 tablespoons cornstarch (0.7-1 oz or 20-30g)
- Salt, to taste
- Cooking oil for frying
Instructions:
- Cook the potatoes in a pressure cooker with 4 tablespoons of water and salt to taste until they are tender. This usually takes 10 to 15 minutes after the cooker reaches pressure.
- Once cooked, remove the potatoes from the cooker and let them cool slightly.
- Peel the potatoes and mash them in a large bowl, adding salt.
- Add 2-3 tablespoons of cornstarch to the mashed potatoes and mix well until you get a smooth dough.
- On a clean, smooth surface, open a plastic bag and place the potato dough inside it. Then, using a rolling pin, flatten the dough to about 1.5 cm thickness.
- Using a smiley face-shaped cutter (or a small glass), cut out the dough into smiley face shapes.
- Create the eyes and mouth for each smiley face using a piping tip or the handle of a spoon.
- Heat the cooking oil in a frying pan and fry the potatoes over medium-high heat until they are golden and crispy.
- Remove the potatoes from the pan and place them on paper towels to drain excess oil.
