Ingredients:

  • 6 medium potatoes (approximately 32 oz or 900g)
  • 2-3 tablespoons cornstarch (0.7-1 oz or 20-30g)
  • Salt, to taste
  • Cooking oil for frying

Instructions:

  1. Cook the potatoes in a pressure cooker with 4 tablespoons of water and salt to taste until they are tender. This usually takes 10 to 15 minutes after the cooker reaches pressure.
  2. Once cooked, remove the potatoes from the cooker and let them cool slightly.
  3. Peel the potatoes and mash them in a large bowl, adding salt.
  4. Add 2-3 tablespoons of cornstarch to the mashed potatoes and mix well until you get a smooth dough.
  5. On a clean, smooth surface, open a plastic bag and place the potato dough inside it. Then, using a rolling pin, flatten the dough to about 1.5 cm thickness.
  6. Using a smiley face-shaped cutter (or a small glass), cut out the dough into smiley face shapes.
  7. Create the eyes and mouth for each smiley face using a piping tip or the handle of a spoon.
  8. Heat the cooking oil in a frying pan and fry the potatoes over medium-high heat until they are golden and crispy.
  9. Remove the potatoes from the pan and place them on paper towels to drain excess oil.
  10. Serve the hot smiley potatoes with ketchup or your preferred dipping sauce.
