Ingredients:

  • 1 cup (250g / 8.8 oz) cream cheese
  • 2/3 cup (120g / 4.2 oz) sugar
  • 2 egg yolks
  • 1/2 cup (100g / 3.5 oz) butter
  • 3/4 teaspoon salt
  • Vanilla extract, to taste
  • 2 and 1/4 cups (300g / 10.6 oz) all-purpose flour
  • 1 teaspoon baking powder

Instructions:

  1. In a large bowl, mix together the cream cheese, sugar, egg yolks, butter, salt, and vanilla extract using a spoon or electric mixer until you achieve a smooth mixture.
  2. Gradually add the all-purpose flour and baking powder to the mixture, stirring well until a consistent dough forms. The dough should be firm enough to shape.
  3. Preheat the oven to 180°C (350°F) and prepare a baking sheet by greasing it with butter or lining it with parchment paper.
  4. Take portions of the dough and shape them into balls using your hands. Alternatively, you can roll out the dough and cut it into circles using a cookie cutter or a glass. Stack 5 circles of dough and press a large toothpick through the center.
  5. Arrange the dough balls on the prepared baking sheet, leaving space between them to allow for expansion during baking.
  6. Bake in the preheated oven for approximately 15-20 minutes, or until the cookies are golden brown on the bottom.
  7. Remove from the oven and let the cookies cool completely before serving. If desired, dust with powdered sugar.
