JUST COOKED RICE! Economical Flourless Recipe!

If you’re looking for a creative and economical way to use leftover rice, try these delicious treats made with just cooked rice. This simple, flourless recipe is perfect for making the most of basic ingredients you already have at home. Follow the steps below to create these balls that are crispy on the outside and soft on the inside, ideal for stuffing with your favorite fillings. Let’s get started!

Ingredients:

  • 2 cups (360g or 12.7 oz) of cooked rice
  • Salt to taste
  • Oil for greasing

Preparation Method:

  1. Rice Preparation:
    • In a pot, heat 2 cups of water for each cup of rice over medium heat, adding salt to taste.
    • Cook the rice over medium heat until the water is absorbed and the grains are soft.
    • Remove from heat, cover, and let cool completely.
  2. Dough Preparation:
    • Once the rice is cool, grind it into a dough using a food processor, fork, or mortar. Make sure the grains are well mashed.
    • Divide the dough into portions. For each cup of rice, you will have approximately 6 balls.
    • With hands lightly greased with oil, form balls with each portion of dough and then flatten them to form discs about 1 centimeter thick. Shape the edges nicely.
    • Place the discs on a plate lightly greased with oil.
  3. Cooking the Rice Balls:
    • Heat a thick-bottomed skillet over medium-high heat.
    • Once hot, place the arepas in the skillet and cook for 5 to 10 minutes on each side until golden brown.
    • To finish, put the balls in the toaster until they are slightly puffed and crispy on the outside.
    • Remove from the toaster and, being careful not to burn yourself, open the arepas on the side with a knife to form a pocket.
  4. Serving:
    • Serve the balls stuffed with cheese, avocado, or any other filling of your choice.
    • Rice balls are a great alternative for breakfast or any time of the day.
