Ingredients:

  • 3.5 fl oz (100 ml) milk (about 100 g)
  • 3 eggs
  • 1.8 fl oz (50 ml) oil or butter (about 50 g)
  • Optional: 2 tablespoons grated Parmesan cheese (about 0.7 oz or 20 g)
  • 1 teaspoon salt (to taste)
  • 2 cups hydrated tapioca (about 10.6 oz or 300 g)
  • 2 cups cornstarch (about 10.6 oz or 300 g)
  • 1 tablespoon baking powder (about 0.35 oz or 10 g)

Instructions:

  1. Preheat the oven to 350°F (180°C).
  2. In a blender, add the milk, eggs, oil (or butter), Parmesan cheese (if using), salt, tapioca, and cornstarch.
  3. Blend for about 2 minutes until you have a liquid and homogeneous mixture.
  4. Add the baking powder and blend for another 1 minute just to combine.
  5. Grease and flour a loaf pan approximately 8.7 inches (22 cm) long by 3.9 inches (10 cm) high and 3.5 inches (9 cm) wide.
  6. Pour the batter into the prepared pan.
  7. Bake in the preheated oven for about 40 minutes, or until the bread is golden and firm to the touch.
  8. Remove from the oven and let it cool slightly before removing from the pan.
