  • 4 egg yolks
  • 4 tablespoons sugar (about 50g)
  • Zest of lemon to taste
  • 4 tablespoons cornstarch (about 32g)
  • 4 egg whites
  • 1 tablespoon sugar (about 12.5g)
  • 1 tablespoon lemon juice


  1. In a bowl, whisk together the egg yolks and sugar until creamy.
  2. Add lemon zest and cornstarch, and whisk again until incorporated.
  3. In another bowl, beat the egg whites until stiff peaks form.
  4. Add 1 tablespoon of sugar and 1 tablespoon of lemon juice to the egg whites, and beat again.
  5. Gently fold the beaten egg whites into the egg yolk mixture.
  6. Transfer the batter into a greased and floured cake pan.
  7. Bake in a preheated oven at 180°C (350°F) for about 20 minutes, or until the cake is baked through and golden.
  8. Remove the cake from the pan, dust with sugar on top, and serve.
