  • 200g (7 oz) unsalted butter, softened
  • 1 cup granulated sugar
  • Zest of lemons
  • 120ml (1/2 cup) heavy cream
  • 375g (3 cups) all-purpose flour (without baking powder)


  1. In a bowl, mix the butter, sugar, and lemon zest until you get a creamy whitish mixture.
  2. Add the heavy cream and mix well.
  3. Gradually add the flour and mix until a homogeneous dough forms.
  4. Shape the cookies using a cookie press. If you don’t have a cookie press, you can roll the dough into small balls. Roll the balls in granulated sugar and place them on a baking sheet.
  5. Chill in the refrigerator for 15 minutes.
  6. Preheat the oven to 410-430°F (210-220°C).
  7. Bake the cookies for approximately 15 minutes, until they begin to turn golden.
  8. Allow the cookies to cool completely.

Note: If using a cookie press, dust sugar underneath the cookies to prevent sticking.
