Ingredients:
- 1 cup (170 grams / 6 ounces) water
- 1/4 to 1/2 teaspoon salt
- 1/3 cup (75 grams / 2.6 ounces) butter
- 1/2 cup (90 grams / 3.2 ounces) oats
- 2 eggs
- 1/2 teaspoon baking powder (optional)
Instructions:
- In a saucepan, combine water, salt, and butter. Heat over low heat until the butter melts.
- Add oats to the mixture in the saucepan. Cook over low heat until oats absorb the water and the mixture thickens. Let it cool.
- Preheat the oven to 180-190°C (350-375°F) for 10 minutes.
- Once the mixture has cooled, gradually add eggs, mixing well with a mixer.
- If desired, add baking powder to the batter.
- Place the batter into a piping bag with a nozzle diameter of 7-8 mm (1/4-1/3 inch).
- On a baking sheet lined with parchment paper, pipe small rounds or desired shapes of the batter, leaving space between each.
- Wet your fingers with water and flatten the dough rounds on the parchment paper.
- Bake at 180-190°C (350-375°F) for 15 minutes, then reduce the temperature to 150°C (300°F). Continue baking until the cookies are dry and crispy, for about 25-40 minutes.
- Check if the cookies are dry and crispy. If they are still soft, bake for an additional 10-20 minutes at 130-150°C (265-300°F).
- Once completely cooled, store the cookies in an airtight container for 2 to 3 months to maintain their crispiness.
