Ingredients:

  • 1 cup (170 grams / 6 ounces) water
  • 1/4 to 1/2 teaspoon salt
  • 1/3 cup (75 grams / 2.6 ounces) butter
  • 1/2 cup (90 grams / 3.2 ounces) oats
  • 2 eggs
  • 1/2 teaspoon baking powder (optional)

Instructions:

  1. In a saucepan, combine water, salt, and butter. Heat over low heat until the butter melts.
  2. Add oats to the mixture in the saucepan. Cook over low heat until oats absorb the water and the mixture thickens. Let it cool.
  3. Preheat the oven to 180-190°C (350-375°F) for 10 minutes.
  4. Once the mixture has cooled, gradually add eggs, mixing well with a mixer.
  5. If desired, add baking powder to the batter.
  6. Place the batter into a piping bag with a nozzle diameter of 7-8 mm (1/4-1/3 inch).
  7. On a baking sheet lined with parchment paper, pipe small rounds or desired shapes of the batter, leaving space between each.
  8. Wet your fingers with water and flatten the dough rounds on the parchment paper.
  9. Bake at 180-190°C (350-375°F) for 15 minutes, then reduce the temperature to 150°C (300°F). Continue baking until the cookies are dry and crispy, for about 25-40 minutes.
  10. Check if the cookies are dry and crispy. If they are still soft, bake for an additional 10-20 minutes at 130-150°C (265-300°F).
  11. Once completely cooled, store the cookies in an airtight container for 2 to 3 months to maintain their crispiness.
