Ingredients:
- 12 eggs
- 10.6 oz (300g) sugar (12 tablespoons)
- 6 fl oz (180ml) vegetable oil (12 tablespoons)
- 6.3 oz (180g) all-purpose flour (12 tablespoons)
- 1 packet (0.35 oz / 10g) baking powder
For the syrup:
- 21.2 oz (600g) sugar
- 30.4 fl oz (900ml) water
- Juice of 1 lemon
Instructions:
- Preheat the oven to 350°F (180°C). Grease a cake pan with oil and set aside.
- In a large bowl, beat the eggs with the sugar until the mixture is pale and fluffy.
- Add the vegetable oil, all-purpose flour, and baking powder to the egg and sugar mixture. Mix well until smooth.
- Pour the batter into the greased pan and bake in the preheated oven for approximately 35 minutes, or until the cake is golden and fully baked. Use a toothpick to check for doneness.
- While the cake is baking, prepare the syrup. In a saucepan, combine the sugar and water and bring to a medium heat. Cook for about 5 minutes until the syrup slightly thickens.
- Remove the syrup from the heat and stir in the lemon juice, mixing well.
- Once the cake is done and still warm, cut it into pieces and generously drizzle with the warm syrup.
