Tapioca Cheese Bites in a Budget-Friendly Way!

  • 2 cups (8.8 oz / 250 g) whole milk
  • 2 cups (7 oz / 200 g) tapioca granules
  • 2 cups (7 oz / 200 g) grated mozzarella cheese
  • 1 teaspoon salt
  • Freshly ground black pepper, to taste


  1. In a large bowl, mix tapioca, grated mozzarella cheese, salt, and black pepper.
  2. Heat the milk until it boils, then pour it over the tapioca and cheese mixture. Stir well until you get a smooth and thick batter.
  3. Let the batter rest for about 10 minutes to allow the tapioca to absorb the liquid.
  4. Grease a baking dish with water and place plastic wrap, pressing it with your hands to ensure it’s compact and of the same size.
  5. Transfer the batter to the baking dish and spread it evenly with a spoon.
  6. Refrigerate for approximately 4 hours to firm up (or freeze for 1 hour if preferred).
  7. After chilling time, remove the batter from the refrigerator/freezer and unmold. Cut the batter into small cubes.
  8. Heat oil in a pan. To check if the oil is hot enough, insert a toothpick into the pan; if bubbles form around the toothpick, it’s ready.
  9. Fry the tapioca cubes in hot oil, in batches, until golden brown and crispy.
  10. Remove the fried tapioca bites, drain on paper towels, and serve.
