For the crust:

  • 1 egg
  • 2 oz (60g) sugar
  • 1.75 oz (50g) melted butter
  • 1 teaspoon (4g) baking powder
  • Zest of 1 lemon
  • 5.25 to 7 oz (150g to 200g) flour

For the cream:

  • 1 egg yolk
  • Zest of 1 lemon
  • 1.25 oz (35g) sugar
  • 0.7 oz (20g) cornstarch
  • Juice of 1 lemon
  • 8.5 fl oz (250ml) milk

For decoration:

  • Strawberries
  • Blackberries
  • Mint leaves

Preparation method:

  1. In a bowl, mix the egg and sugar until smooth.
  2. Add the melted butter and mix well.
  3. Add the baking powder and grated lemon zest, stirring until incorporated.
  4. Gradually add the sifted flour to the mixture, stirring until you get a smooth, lump-free dough.
  5. Divide the dough equally among the prepared mini tart pans and shape it as if making a tart.
  6. Make small holes with a fork all over the dough in the pans.
  7. Bake in the preheated oven for about 15-20 minutes or until the mini cakes are golden and firm to the touch.
  8. While the cakes bake, prepare the cream. In a saucepan, mix the egg yolk, lemon zest, sugar, cornstarch, lemon juice, and milk.
  9. Cook over medium heat, stirring constantly, until the cream thickens and becomes smooth.
  10. Remove from the oven and let cool completely before removing from the pans.
  11. Spoon the cream over them and decorate with fresh fruits and mint leaves before serving.
