  • 1 zucchini
  • 2 potatoes
  • 1 carrot
  • 3.5 oz (100 g) of mozzarella cheese (or other cheese of your preference)
  • Green onions
  • 2 eggs
  • Salt
  • Black pepper
  • 1 clove of garlic
  • 2 tablespoons of all-purpose flour
  • Vegetable oil

For the sauce:

  • 2 tablespoons of sour cream
  • 2 tablespoons of mayonnaise
  • 2 teaspoons of sweet paprika powder
  • 2 teaspoons of dried garlic


  1. Grate the zucchini, potatoes, and carrot.
  2. In a bowl, mix the grated vegetables, add the grated mozzarella cheese, chopped green onions, beaten eggs, salt, black pepper, and minced garlic. Mix well.
  3. Add the all-purpose flour to the mixture and stir until you have a homogeneous dough.
  4. Heat the vegetable oil in a frying pan.
  5. With a spoon, take portions of the dough and place them in the frying pan, forming small fritters. Fry until golden on both sides.
  6. While the fritters are frying, prepare the sauce: mix sour cream, mayonnaise, sweet paprika, and dried garlic in a bowl.
  7. Serve the zucchini fritters with the sauce on top.
